Toffee Nut Bars

 Ingredients:

½ cup shortening
½ cup brown sugar
1 cup sifted flour

nut/coconut topping:
2 eggs
1 cup brown sugar
1 teaspoon vanilla
2 tablespoon flour
1 teaspoon baking powder
½ teaspoon salt
1 cup coconut
1 cup chopped nuts

 Directions:

Mix shortening, sugar and flour together well. Use pastry blender or 2 forks. Press and flatten with hand to cover bottom of ungreased 13" X 9" oblong pan. Bake 10 minutes at 350 degrees, then spread with nut/coconut topping.

Topping:
Beat well eggs. Stir in brown sugar and vanilla. Mix together and stir in flour, baking powder and salt. Mix in coconut and chopped nuts.

After spreading with topping, return to oven and bake 25 minutes more till topping is golden brown. Cool slightly, then cut into bars. Yield about 30 bars 1" X 3".
