Ingredients: 1/3 cup butter or other shortening |

Directions: Cream shortening then add sugar gradually, stirring continually
while sugar is being added. Beat yolks until thick and lemon-colored.
Add to shortening mixture and stir in. Measure into flour sifter
flour, baking powder and salt. Sift this gradually into shortening
mixture alternating with milk. When all is added beat thoroughly.
Flavoring should go in with last of the milk. Beat up egg whites
until quite stiff and fold into cake batter until all whites
have disappeared. Bake in moderate oven around 375 degrees about
25 minutes. If baked in loaf cake, it should be baked about 40
minutes. If layer cake, spread jam between layers and over outside.
Then sprinkle with shredded coconut. |
