Perfect Nut Bread

 Ingredients:

2¼ cups flour
2¼ teaspoons baking powder
¼ teaspoon baking soda
¾ cup sugar
¾ cup chopped walnuts
2 tablespoons melted shortening
1 egg, beaten
¾ cup orange juice
1 tablespoon grated orange peel

 Directions:

Sift together flour, baking powder, baking soda, salt, and sugar into a large mixing bowl. Add chopped walnuts to the dry mixture. Add melted shortening, egg, orange juice, and orange peel to dry ingredients. Stir until mixture is dampened, but not smooth. Have shortening at room temperature so it won't separate from the other ingredients. Pour batter into a greased 5" X 9" loaf pan. Spread batter into corners of pan. Bake in a moderate oven (350 degrees) about 70 minutes. Remove the loaf from the pan and cool on a cake rack. When it is cold, cut bread in thin slices with a serrated knife, or wrap it in waxed paper or aluminum foil and store for 24 hours. You'll find the nut bread will be easier to slice and will have a better than ever flavor.

NOTE: Cover loaf pan with another pan the first 20 minutes of baking so the loaf won't crack on top.
