Peach Cake with Meringue

 Ingredients:

1 cup sifted flour
2 tablespoons sugar
1½ teaspoons baking powder
½ cup milk
8 large peaches, halved
½ teaspoon salt
2 tablespoons shortening
2 eggs, separated
1 teaspoon vanilla
¼ cup sugar
1 teaspoon grated lemon rind

 Directions:

Sift flour, baking powder, sugar and salt into a bowl. Cut in shortening until mealy. Add the egg yolks beaten into the milk and vanilla. Combine with ingredients in bowl. Pour dough into a greased shallow pan (8" square). Split the peaches into halves, pit but do not peel. Press the peaches, cut side up into the dough. Sprinkle with sugar and lemon rind. Bake in moderate oven until the cake is brown and the peaches tender. Oven 350 degrees. Then beat egg whites with four tablespoons of sugar, one tablespoon at a time and spread on top. Put into hot oven until light brown. Bake 25 minutes or until brown.
