Hot Milk Sponge Cake #2

 Ingredients:

Cake:
2 eggs
1 cup sugar
1 cup flour
1/8 teaspoon salt
1 teaspoon baking powder
1 tablespoon butter
½ cup hot milk

Topping:
6 tablespoons melted butter
2/3 cup brown sugar
¼ cup cream or top milk
1 cup moist shredded coconut
½ teaspoon vanilla extract

 Directions:

Cake:

Beat eggs until light and thick. Slowly add sugar and beat well for about 2½ minutes with electric mixer. Fold sifted dry ingredients into egg and sugar mixture all at once. Melt butter in hot milk and add all at once. The folding in of dry ingredients and milk should take only one minute. Bake in waxed paper lined or well greased 9 inch round cake tin, moderate oven (360 degrees) for 30 minutes.
Topping:
Combine ingredients thoroughly over low heat then spread over warm cake. Place cake under broiler till topping is lightly browned.
